- ¼ cup vegetable oil
- 1 red bell pepper, chopped
- 1-16 oz. can plum tomatoes
- 1 large yellow onion, julienned
- 2 tablespoons Hungarian sweet paprika
- 1 ½ cups chicken stock
- ¾ cups sour cream or non-dairy sour cream
- 3 tablespoons unsalted butter or non-dairy butter alternative
- 2 tablespoons flat-leaf parsley, finely chopped
- Freshly ground black pepper, to taste
