- 8 small-medium potatoes, peeled
- 1 large onion
- 1 piece of fresh ginger (2 tablespoons)
- 2 cloves garlic
- 1 teaspoon paprika
- 2 cups coconut cream
- 2 teaspoons white vinegar
- ½ cup water
- 1 8-ounce can of bamboo shoots, drained and cut into thin slices lengthwise
- 1 teaspoon garam masala
