- 7 medium yellow onions
- 3 tablespoons vegetable oil, divided
- 1¾ lbs. filet of boneless, skinless whitefish, pike, carp, hake, sole or a combination, cut into 1 inch pieces
- 3 large carrots, peeled and cut into ½” coins
- 1 medium beet, peeled and cut into large chunks
- 2 eggs, lightly beaten
- 3 ½ teaspoons salt, divided
- 1 teaspoon freshly ground black pepper, divided
- 4-6 tablespoons matzo meal
- ¼ teaspoon sugar
