For the dough
- 2 cups semolina
- 1 tablespoon canola oil
- 1 teaspoon kosher salt
- 1 cup lukewarm water
For the filling
- 1 tablespoon canola oil
- 1 large onion, finely diced
- 1lb ground beef
- ½ cup parsley, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon baharat spice (can substitute 1/2 teaspoon each of black pepper, cinnamon and nutmeg)
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
For the soup
- 5 tablespoons canola oil
- 1 large onion, diced
- 4 cups chopped celery
- 4 beets, peeled, sliced in 1/8ths
- 6 cups chicken stock
- 4 cups water
- ½ cup lemon juice
- 4 tablespoons sugar
- 1 ½ teaspoons kosher salt
- ¾ teaspoon black pepper
- Chopped parsley and dill, to garnish
