- 3 medium onions, diced
- 6 cloves of garlic
- 1 ½-inch piece of ginger
- 3 teaspoons salt
- 3 teaspoons garam masala
- 1 teaspoon turmeric
- ½ teaspoon ground black pepper
- 2 cups tomato puree
- 5 teaspoons of tomato paste
- 1 ¾ pounds carrots, peeled and cut into 2 ½-inch batons (if your carrots are thick, cut them lengthwise so they are all even thicknesses)
