Ingredients
Yield: 1 cake in a 9” round baking dish
For the crust:
- 1 ½ cups all purpose flour
- ⅔ cup sugar
- ½ cup unsweetened shredded coconut
- ½ tbsp baking powder
- ¼ tsp salt
- 4 oz. butter, melted
- room temperature butter to grease dish
- ½ tsp vanilla
For the pastry cream:
- 16 oz half and half
- ½ cup sugar
- ½ oz cornstarch
- ¼ tsp cinnamon
- ½ tsp salt
- 2 eggs
For the filling and topping:
- 1 ½ apples, peeled, cored and thinly sliced into half moons
- ½ cup fresh cranberries
- ¼ cup of sugar
- ¼ tsp cinnamon
- 1 tsp vanilla
- ½ cup sour cream
- 1 egg yolk
